Peach Parfait Pie

Ingredients
  Lemon gelatin 1 Tablespoon
  Water 1 1⁄4 Cup (20 tbs)
  Peach ice cream 1 Pint
  Whipped topping 1 Cup (16 tbs), thawed
  Pastry shell/Crumb crust 1
  Whipped topping 1 Tablespoon
  Peach slices 1 Cup (16 tbs)
  Mint 1 (1 Can)
Directions

MAKING
1. In a two quart bowl, mix gelatin and water and microwave at HIGH for three minutes until the gelatin dissolves, stirring at one-minute intervals
2. Add a few scoops of ice cream into the hot gelatin and stir till it melts; add the rest of the ice cream as well
3. Add whipped topping and whisk until smooth; refrigerate for forty five minutes until it mounds easily with a spoon
4. Add spoonfuls int the pastry shell or crumb crust and refrigerate for eight hours or overnight until firm

SERVING
3. Garnish with whipped topping, slices of peach and sprigs of mint before serving
