Apricot Parfait

Ingredients
  Plain gelatin 1 1⁄2 Teaspoon
  Canned unsweetened apricot halves 16 (With Juice)
  Artificial sweetener To Taste
  Lime juice 2 Teaspoon
Directions

Soften the gelatin in a little cold water.
Drain apricots, reserving all juice, and cut into small pieces.
Measure the amount of juice and add water, if necessary, to measure 1 1/2 cups of liquid total.
Combine this liquid with the gelatin.
Allow to set for 20 minutes.
Combine the apricots, thickened juice, sweetener, and lime juice.
Refrigerate until slightly thickened.
Fill parfait glasses with the apricots and chill until ready to serve.
