|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Buttermilk||1 3⁄4 Cup (28 tbs)|
|Lemon juice||1 Tablespoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Almond extract||3⁄4 Teaspoon|
|Yellow food coloring||To Taste|
|Peaches||3 , sliced|
Soften gelatin in 1/4 cup cold water in saucepan.
Place over low heat; stir until gelatin is dissolved.
Remove from heat; add buttermilk, lemon juice, sugar, almond extract and several drops of food coloring.
Chill until mixture is consistency of unbeaten egg whites.
Layer gelatin mixture and peaches in 3 tall glasses, using about 2/3 cup gelatin mixture in each glass.
Chill until firm
