Blueberry Lemon Light Parfaits
|Lemon flavored gelatin||3 Ounce (1 package)|
|Chilled whipping cream/1 envelope (about 2 ounces) dessert topping mix||1 Cup (16 tbs)|
|Confectioners' sugar||1⁄4 Cup (4 tbs)|
|Vanilla ice cream||1 1⁄2 Cup (24 tbs), softened|
|Fresh blueberries/1 package (10 ounces) frozen blueberries, thawed||2 Cup (32 tbs)|
Prepare gelatin as directed on package except refrigerate, stirring occasionally, until mixture mounds slightly when dropped from a spoon.
In chilled bowl, beat whipping cream and sugar until stiff.
Stir in vanilla.
Beat gelatin in small mixer bowl 1/2 minute.
Beat in ice cream on low speed until smooth.
Beat 1/2 minute on high speed.
Alternate layers of gelatin mixture, whipped cream and blueberries in par-fait glasses or in 1 1/2-quart glass serving bowl.
