Double Cheese Parfait
|Red cabbage||1⁄2 Medium|
|Yellow squash||2 Medium|
|Celery stalks||3 Large|
1 Wash, quarter and core red cabbage; thinly slice with a sharp knife on a wooden board. Wash and tip squash and shred on largest hole of grater. Wash celery and thinly slice.
2 Evenly divide shredded cabbage in the bottoms of 4 large wine glasses; cover with layer of grated squash; top with sliced celery. Refrigerate until serving time.
