Orange And Berry Parfaits
|Cold water||1⁄2 Cup (8 tbs)|
|Unflavored gelatin||1 Teaspoon|
|Frozen orange juice concentrate/Frozen pineapple juice concentrate||2 Tablespoon|
|Low calorie sweetener||1⁄4 Teaspoon (Powdered One, To Equal 1 Tablespoon Sugar)|
|Ice water||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Nonfat dry milk powder||1⁄3 Cup (5.33 tbs)|
|Fresh raspberries/Sliced fresh strawberries / frozen unsweetened strawberries||1 1⁄2 Cup (24 tbs), thawed|
In a small saucepan combine water and gelatin; let stand for 5 minutes.
Add orange or pineapple juice concentrate.
Cook and stir 6 to 8 minutes over medium heat or till mixture is boiling.
Remove saucepan from heat.
Stir in low-calorie powdered sweetener; cool to room temperature.
Meanwhile, in a small mixing bowl combine ice water, lemon juice, and vanilla.
Stir in dry milk powder.
Beat with an electric mixer on high speed for 3 to 6 minutes or till soft peaks form.
Fold into gelatin mixture.
In 6 parfait glasses alternately layer gelatin mixture and raspberries or strawberries.
Chill for 6 to 24 hours.
