Sacramento Parfait

Ingredients
  Cooked rice 1 1⁄2 Cup (24 tbs), chilled (Brand)
  Seedless raisins 1⁄2 Cup (8 tbs)
  Canned apricot halves 8 3⁄4 Ounce, drained (1 Can)
  Toasted chopped almonds 1⁄4 Cup (4 tbs)
  Whipping cream 1⁄2 Cup (8 tbs)
  Sugar 1 Cup (16 tbs)
  Ground cinnamon 1⁄4 Teaspoon
  Ground nutmeg 1⁄4 Teaspoon
  Maraschino cherries 2 Tablespoon (If Desired)
Directions

In a large bowl, combine cooked rice, raisins, apricots and almonds.
Mix.
Combine whipping cream, sugar, cinnamon and nutmeg.
Whip until cream forms firm peaks.
Fold into rice mixture.
Chill 4 to 6 hours.
Spoon into dessert dishes or parfait glasses and top each with a maraschino cherry, if desired.
