|Cooked rice||1 1⁄2 Cup (24 tbs), chilled (Brand)|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Canned apricot halves||8 3⁄4 Ounce, drained (1 Can)|
|Toasted chopped almonds||1⁄4 Cup (4 tbs)|
|Whipping cream||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Ground cinnamon||1⁄4 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Maraschino cherries||2 Tablespoon (If Desired)|
In a large bowl, combine cooked rice, raisins, apricots and almonds.
Combine whipping cream, sugar, cinnamon and nutmeg.
Whip until cream forms firm peaks.
Fold into rice mixture.
Chill 4 to 6 hours.
Spoon into dessert dishes or parfait glasses and top each with a maraschino cherry, if desired.
