Fruit Parfait

Ingredients
  Plain non fat yogurt 1⁄4 Cup (4 tbs)
  Part skim ricotta cheese 1⁄4 Cup (4 tbs)
  Frozen orange juice concentrate 1 Tablespoon, thawed
  Vanilla extract 1⁄2 Teaspoon
  Reduced calorie whipped topping 8 Ounce (1 Cup)
  Peach 1 Medium, peeled and diced
  Drained canned crushed pineapple 1⁄4 Cup (4 tbs)
  Shredded coconut 1 Teaspoon
  Maraschino cherry 1 , cut in half
Directions

1. In small bowl, combine yogurt, ricotta, juice, and vanilla until blended; fold in whipped topping.
2. Spoon one-third cheese mixture into 2 tall parfait glasses; add about 2 teaspoons peach and pineapple to each. Repeat layering twice; top with coconut and cherry half. Cover and chill 1 hour.
