|Part skim ricotta cheese||1⁄4 Cup (4 tbs)|
|Frozen orange juice concentrate||1 Tablespoon, thawed|
|Vanilla extract||1⁄2 Teaspoon|
|Reduced calorie whipped topping||8 Ounce (1 Cup)|
|Peach||1 Medium, peeled and diced|
|Drained canned crushed pineapple||1⁄4 Cup (4 tbs)|
|Shredded coconut||1 Teaspoon|
|Maraschino cherry||1 , cut in half|
1. In small bowl, combine yogurt, ricotta, juice, and vanilla until blended; fold in whipped topping.
2. Spoon one-third cheese mixture into 2 tall parfait glasses; add about 2 teaspoons peach and pineapple to each. Repeat layering twice; top with coconut and cherry half. Cover and chill 1 hour.
