Frozen Yogurt Parfait
|Fresh raspberries/Strawberries / blueberries / 1 package, 12 ounces frozen unsweetened berries, thawed||1 Pint|
|Lemon juice||1 Tablespoon|
|Grated lemon rind||1 Teaspoon|
|Frozen vanilla yogurt||1 Pint, slightly softened|
1 In a food processoror blender, whirl half of the raspberries with the sugar, lemon juice, and lemon rind for 1 5 seconds or until pureed.
Transferthe puree to a medium-size bowl and stir in the remaining berries.
2 Layer the puree with the frozen yogurt in four 8-ounce parfait glasses.
Place in the freezer for 45 minutes or until the parfait is firm.
