|Gelatin||3 Ounce (1 Package, Jell-O Brand Any Flavor)|
|Boiling water||1 Cup (16 tbs)|
|Miniature marshmallows||1 Cup (16 tbs)|
|Cold water||1 Cup (16 tbs)|
Dissolve gelatin in boiling water.
Add cold water.
Measure 3/4 cup of the gelatin; chill until slightly thickened.
With electric mixer at medium speed, beat measured gelatin until fluffy, thick and about doubled in volume.
Chill until set.
Chill remaining gelatin until set; spoon half of remaining gelatin into parfait glasses.
Add a layer of marshmallows.
Spoon whipped gelatin over marshmallows in glasses; top with remaining clear gelatin.
Garnish with additional marshmallows, if desired.
