Peach Melba Parfait
|Cream cheese||3 Ounce, softened (1 Package)|
|Gelatin||3 Ounce (1 Package, Jell-O Brand Peach Flavored)|
|Boiling water||3⁄4 Cup (12 tbs)|
|Cold water||1⁄2 Cup (8 tbs)|
|Peaches/1 can 8.75 ounces peaches, drained and diced||1 Cup (16 tbs), diced and peeled|
|Raspberry jam/Preserves||1⁄4 Cup (4 tbs)|
Combine cream cheese, sugar and milk in bowl.
With electric mixer at medium speed, blend well; set aside.
Completely dissolve gelatin in boiling water.
Combine cold water and ice cubes to make 1 1/4 cups.
Add to gelatin, stirring until slightly thickened.
Remove any unmelted ice.
Fold in peaches.
Spoon half of the fruited gelatin into parfait or wine glasses.
Carefully spoon about 1 tablespoon of the cheese mixture over fruited gelatin in each glass; add scant tablespoon of the jam.
Spoon remaining fruited gelatin over jam in glasses.
Chill until set, about 2 hours.
Garnish with whipped topping and peach slices, if desired.
