Strawberry Rhubarb Parfait Recipe/With Outtakes

In this episode, Jon makes a delicious vegan strawberry rhubarb parfait with homemade coconut whip cream. Yum!
Ingredients
  Water 1 1⁄2 Cup (24 tbs)
  Vanilla 1 Teaspoon
  Agave nectar 2 Tablespoon
  Chopped rhubarb 1 1⁄2 Cup (24 tbs)
  Chopped strawberries 1 1⁄2 Cup (24 tbs), separted
  Tapioca starch/Corn starch 2 Tablespoon
  Almonds 1 Cup (16 tbs)
  Oats 1⁄2 Cup (8 tbs)
  Cinnamon 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Pitted dates 2
  Coconut oil 1 Tablespoon
  Canned coconut cream 1⁄2 Cup (8 tbs)
  Vanilla extract 1⁄2 Teaspoon
  Powdered sugar 2 Tablespoon
Directions

MAKING:

  1. In a saucepan, boil water, add vanilla and agave nectar. Add chopped rhubarbs to this liquid and stir well.
  2. Cover with lid, allow it to boil and then simmer for 5 minutes.
  3. Add chopped strawberries allow it to boil and then simmer for 5 minutes.
  4. Strain the liquid and add tapioca starch to it. Mix well and pour into heated saucepan. Allow it to reduce.
  5. Add remaining strawberries and allow it to cool.
  6. Roast almonds, oats with salt and cinnamon in a dry saucepan. Once done, allow it to cool and then chop using food processor after adding dates and coconut oil.
  7. In a mixer, add coconut cream, vanilla extract and powdered sugar. Mix well.
  8. In a champagne glass, layer coconut cream mixture, strawberry-rhubarb liquid, nuts mixture and repeat until top is reached.
  9. Top with chopped mint. Chill if desired.

  1. Serve and enjoy!
