Veggie Panini

Ingredients
  Pepper and onion 12 Ounce, frozen
  Olive oil 1
  Sun dried tomato pesto 1 Tablespoon
  Shredded parmesan cheese To Taste
  Parsley 1⁄2 Teaspoon
  Oregano 1⁄2 Teaspoon
  Basil 1⁄2 Teaspoon
  Red pepper 1⁄2 Teaspoon, crushed
  Black pepper 1⁄4 Teaspoon, crushed
  Salt To Taste
  Sour dough bread slice 4
  Butter 1 Teaspoon (Leveled)
Directions

Heat the pan on high.
Add 12 oz of frozen 3 pepper & onion blend.
Cook it on high until water disappears.
Sprinkle little olive oil.
Add spice mix.
Saute for a couple more minutes.
The filling is now ready.

This recipe would make filling for 2 Paninis.

For making 1 Panini:
Turn on the Panini Maker / Griller.
Spread little butter on one side of both the slices of Sour Dough Thick Sliced Bread. Buttered sides would go on the Panini Maker/Griller.
Spread Pesto on one slice (non buttered side), as per taste
Spread half the Panini filling.
Spread shredded Parmesan Cheese, as per taste.
Top it with the second slice.
Place the Panini on the Panini Maker/Griller when it is HOT.
Press and wait until the Panini is ready!
Enjoy with your favorite soup!!
