Spiced Potato Pancakes

  Onion 1
  Parsley sprigs 3
  Eggs 5
  Nutmeg 1⁄4 Teaspoon
  Salt 1 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
  Plain flour 5 Tablespoon
  Potatoes 1 Kilogram, peeled
  Cooking oil 1 Tablespoon

In work bowl chop the onion and the parsley.
In a bowl lightly beat 5 eggs, add the seasoning and the flour and mix together.
In the work bowl, using the grating disc, grate the potatoes.
Using your hands squeeze as much water as possible out of potatoes.
Mix into the rest of ingredients.
In a frying pan preheat some oil and using a tablespoon form thin round pancakes 5-8 cm (2-3 in) in diameter.
Fry until golden brown on both sides.
Serve as a vegetable with meats and poultry.
Note: The pancakes may be made about 15 cm (6 in) in diameter and can be made into a pancake cake similar to the one described on page
