Fluffy Buttermilk Pancakes With Berry Sauce

Ingredients
  Baking powder 2 1⁄4 Teaspoon
  All purpose flour 2 Cup (32 tbs)
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Buttermilk 2 Cup (32 tbs)
  Eggs 2
  Unsalted butter 1⁄4 Cup (4 tbs), melted
  Vanilla extract 1 Teaspoon
  Sliced strawberries 1 Cup (16 tbs)
  Blueberries 1 Cup (16 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Lemon zest 1 Teaspoon
  Water 3⁄4 Cup (12 tbs)
  Cornstarch 1 Tablespoon
  Lemon juice 2 Teaspoon
Directions

Pancake recipe:
sift together the dry ingredients ie; flour + baking soda + baking pwd+ salt+ sugar

In a seperate bowl wishk in the eggs+ butter milk + melted butter + vanilla extract
combine dry and wet ingredients into a lumpy mixture.
heat some butter in a skillet over medium heat. spoon in 1/3 cup of batter into the skillet. Flip to the other side once you see bubbles on top and the bottom is golden brown
serve hot with strawberry blueberry sauce

sauce recipe:

combine the strawberries and blueberries in a saucepan. add sugar, water and lemon zest and stir over medium heat. wait till all the sugar is dissolved. stir often. simmer for few minutes till the berries are a cooked. in a bowl dissolve cornstarch with a tbsp of water and lemon juice. add to the starch mixture and keep stirring till the sauce thickens. increase the flame a little and allow to boil while stirring.
remove from heat and enjoy with pancakes
