|Cooked rice||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Flour||1 Cup (16 tbs)|
|Milk/Cream||1⁄4 Cup (4 tbs)|
|Shortening||1 Cup (16 tbs)|
Mix ingredients in order given, adding milk to batter last.
Heat shortening in skillet.
Drop by tablespoons into hot fat.
When golden brown on one side, turn pancake.
Add extra shortening if needed.
Serve rice pancakes with apricot preserves.
