Mawa Ima Paancake ( Mawa Pancakes )

Ingredients
  Mawa 250 Gram
  Ghee 1⁄4 Teaspoon (For greasing)
  Milk 4 Tablespoon
  Vanilla 1 Teaspoon
  Nutmeg 1⁄8 Teaspoon
  Cardamom 1⁄8 Teaspoon
  Powdered sugar 150 Gram
  Almonds 10 Gram
Directions

1. In a large bowl mix together eggs, sugar and ghee to a smooth paste.
2. Add vanilla and then add the flour in a steady trickle adding the milk as required. When the milk and flour are both used up and a smooth paste is obtained, cover the bowl and set aside for 30-35 minutes.
3. Blanche almonds and grind coarsely or chop finely and-add to the mawa which should be warmed and stirred smooth with a little milk in a clean glass bowl. Now add the vanilla and the nutmeg-cardamom powder and stir well alongwith the powdered sugar. Reheat gently for five minutes.
4. Take a medium sized frying pan and grease the surface all over with 1/4 teaspoon ghee. When hot put one dessertspoon or serving spoonful of the pancake mixture and tilt from side to side. When the bottom side is cooked flip the pancake over and cook the other side. When both sides are done put on to a plate. Spoon some mawa mixture on to its centre and fold up the four sides like an envelope.
Khaman-na-ladwa mixture can be substituted if desired instead of the mawa as the latter is not always available. Even khajoor-ghari mix may be used as a filling.
