|Flour||1 Cup (16 tbs), sifted|
|Baking powder||1 1⁄2 Teaspoon|
|Egg||1 , separated|
|Melted butter||2 Tablespoon|
|Milk||3⁄4 Cup (12 tbs)|
|Blueberries||3⁄4 Cup (12 tbs), drained|
Sift flour, baking powder, sugar, salt and cinnamon.
Beat egg yolk until thick and lemony; beat egg white until stiff peaks form.
Add butter to egg yolk;stir in milk.
Add to dry ingredients; mix just to moisten.
Fold in stiffly beaten egg white.
Add blueberries; mix lightly.
Pour batter on hot greased griddle.
Bake on both sides until lightly browned.
