Cottage Cheese Fruit Pancakes
|Cream style cottage cheese||1 Cup (16 tbs)|
|Salad oil||2 Tablespoon|
|Sifted flour||1⁄4 Cup (4 tbs)|
|Strawberry jam||1 Tablespoon|
|Confectioners sugar||1 Tablespoon|
Combine eggs, cheese and salad oil.
Sift flour and salt together; add to egg mixture.
Stir just to moisten.
Bake cakes on lightly greased griddle.
Place 1 tablespoon jam in center of each cake; bring edges of pancake together and roll under.
Sprinkle with confectioners' sugar.
