Banana Pancakes

Ingredients
  Whole wheat pastry flour 1⁄2 Cup (8 tbs)
  Unbleached all purpose flour 1⁄2 Cup (8 tbs)
  Baking powder 1 Teaspoon
  Kosher salt 1 Pinch (scant)
  Egg yolk 1
  Buttermilk 1⁄2 Cup (8 tbs)
  Low fat milk 1⁄2 Cup (8 tbs)
  Safflower oil 1 Teaspoon
  Bananas 1 1⁄2 Large, peeled and sliced very thin
  Egg whites 3
Directions

MAKING
1. In a large bowl, combine flours and baking powder along with the salt, then whisk properly to combine the ingredeints thoroughly then make a small hole in the center of the dry ingredients
2. In another bowl, whisk the next 4 ingredeints together, once combined throughly, then pour the wet ingredients into the small hole in the dry ingredients and now whisk thoroughly without overmixing
3. In another bowl, strain the batter through a fine sieve, now stir the sliced bananas into the batter and beat the egg whites till the soft peaks form
4. Fold into the batter, mixing thoroughly but make sure that you not to reduce the qyantity of the batter
5. Take an iron skillet, and heat it at medium heat, when the skillet is hot, then pour
a few drops of oil in the pan and tilt it so that the oil covers the surface properly
6. Take a small ladle, and use it to, spoon a 1 or 2 tablespoon of batter for each pancake into the pan, make sure that 16 pancakes can be made with the batter
7. Finally cook the pancakes for about 1 1/2 minutes on each side until nicely browned

SERVING
8. Serve hot with maple syrup or jam
