|Lard/White fat||2 Tablespoon|
|Caster sugar||2 Tablespoon|
1 In a frying pan, melt 1/2 oz. fat.
2 When the fat begins to smoke, pour in a thin layer of batter.
3 When the batter has set and is brown on one side, turn it, use a palette knife and cook on the other side.
4 To "toss" a pancake, slip it to the edge of the pan, hold the handle very low down and quickly flip the pancake over.
5 Transfer the pancake on to a plate.
6 Sprinkle with lemon juice and sugar; roll it up carefully.
7 Repeat with the remaining batter.
8 Serve with butter.
