|White cornmeal||2 Cup (32 tbs)|
|Boiling water||2 Cup (32 tbs)|
|Milk||1 Cup (16 tbs)|
|Butter||4 Tablespoon, melted|
|Unbleached flour||1 Cup (16 tbs), sifted|
|Baking powder||4 Teaspoon|
|Fresh raspberries||3 (For Garnish)|
1)Pick a bowl and mix well the cornmeal,sugar and salt.
2)Pour the boiling water and stir until mixture is free of lumps.
3)Cover and keep aside for 15 minutes.
4)Now take another bowl,beat eggs and pour milk,mix and keep aside.
5)In a separate dish,sift the flour and baking powder and set aside.
6)Now add the egg-milk mixture to to the cornmeal mix,and add butter.mix well.
7)Once the mix is smooth,sift in the flour but do not over mix.
8)Batter can be a bit lumpy.
9)Cook on a hot griddle,after greasing it well.
10)Brown both sides.
11)Garnish with raspberries and butter or maple syrup.
