Potato Pancakes With Eggs

Ingredients
  Eggs 2
  Milk 2 Tablespoon
  Melted butter/Margarine 2 Tablespoon
  Flour 2 Tablespoon
  Salt 3⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Onion 1⁄4 Small, sliced
  Potatoes 2 Cup (32 tbs), diced and peeled
Directions

MAKING
1. In a food processor, blend eggs, milk, melted butter, flour, salt, pepper and onion with 1 cup of potatoes, by running the MIX blade for about 5 seconds.
2. Stir in remaining 1 cup of potatoes and run the MIX blade for about 8 seconds until the potatoes are coarsely chopped.
3. Pour ΒΌ cup mixture on hot, and well greased griddle and swirl it immediately to make 4 - inch long cake. Cook until the potato pancake turns brown on both sides.

SERVING
4. Serve potato pancakes with suitable dipping sauces.
