Tomato Plaice Pancakes Crepes
|Pancakes||8 (crepes made from 300 milliliter /1/2 pint batter)|
|Butter||3⁄4 Ounce (20 gram)|
|Flour||3⁄4 Ounce (20 gram)|
|Fish stock||1⁄2 Pint (300 milliliter)|
|Tomato puree||60 Milliliter (4 tablespoons)|
|Freshly ground black pepper||To Taste|
|Plaice fillets||1⁄2 Pound, poached, skinned and flaked (225 gram)|
|Frozen peas and sweetcorn||8 Ounce, cooked (225 gram)|
1.In a pan, heat butter and add flour to it.
2.Cook the mixture for 2 minutes by stirring.
3.Add stock and let the mixture boil.
4.Simmer the mixture until thick.
5.Add tomato puree, salt and pepper.
6.Let the mixture settle at room temperature.
7.Add peas and corn and mix them well.
8.Put the mixture in equal quantities on the crepes and roll them.
9.Freeze for later use.
11.If frozen, thaw at room temperature and heat for 35- 40 minutes at 350 degrees.
