Tomato Plaice Pancakes Crepes

Ingredients
  Pancakes 8 (crepes made from 300 milliliter /1/2 pint batter)
For filling
  Butter 3⁄4 Ounce (20 gram)
  Flour 3⁄4 Ounce (20 gram)
  Fish stock 1⁄2 Pint (300 milliliter)
  Tomato puree 60 Milliliter (4 tablespoons)
  Salt To Taste
  Freshly ground black pepper To Taste
  Plaice fillets 1⁄2 Pound, poached, skinned and flaked (225 gram)
  Frozen peas and sweetcorn 8 Ounce, cooked (225 gram)
Directions

MAKING
1.In a pan, heat butter and add flour to it.
2.Cook the mixture for 2 minutes by stirring.
3.Add stock and let the mixture boil.
4.Simmer the mixture until thick.
5.Add tomato puree, salt and pepper.
6.Let the mixture settle at room temperature.
7.Add peas and corn and mix them well.
8.Put the mixture in equal quantities on the crepes and roll them.
9.Freeze for later use.

SERVING
10.Serve warm.
11.If frozen, thaw at room temperature and heat for 35- 40 minutes at 350 degrees.
