Apple Pancakes

Ingredients
  Pancake batter 1⁄2 Pint, with 1 teaspoon sugar added with oil
  Sugar 1 Teaspoon
  Oil 1 Teaspoon
For filling
  Apples 2 Pound, peeled, cored and sliced
  Butter 1⁄2 Ounce
  Brown sugar 2 Tablespoon
  Cinnamon 1 Teaspoon
  Grated lemon rind 1 Tablespoon
For apricot sauce
  Smooth apricot jam 4 Tablespoon
  Lemon 1 , grated rind and juice
  Water 1⁄2 Pint
  Arrowroot 1 Teaspoon
Directions

MAKING
1) Prepare the pancake batter and stand in a cool place for 30 minutes.
2) In a pan, heat butter and add the apples, sugar, cinnamon, and lemon rind.
3) Place lid and cook over gentle heat for 10-15 minutes, till apples turn tender.
4) In a saucepan, add jam, juice and rind of the lemon, and water and gently heat till the jam dissolves.
5) In a pan, add the arrowroot and water. Stir till the liquid boils.
6) When the liquid is clear, strain.
7) Prepare wafer-thin pancakes.
8) Stack the pancakes creating layers and alternating between the apple mix and pancakes.
9) When layering is complete, top with apricot sauce and place in oven at 375°F or Mark 5to slightly brown.

SERVING
10) Slice wedges and add more apricot sauce over the top.
