German Ham And Noodle Pancake
|Sesame oil||2 Teaspoon|
|Scallions||1 Cup (16 tbs), chopped|
|Wide egg noodles||4 1⁄2 Ounce, cooked, drained|
|Cooked ham||4 Ounce, cubed|
|Egg substitute||1 Cup (16 tbs)|
|Parsley||1⁄4 Cup (4 tbs), chopped|
|Ground black pepper||To Taste|
1. In large nonstick skillet, heat oil; add scallions. Cook, stirring frequently, 5-7 minutes, until tender. Add noodles; cook 1 minute, stirring to coat with oil. Stir in ham.
2. Pour egg substitute over noodle mixture. Place a large heatproof plate on top of noodle mixture; press down firmly. Cook 5 minutes, until crust forms on bottom. With spatula, cut noodle "pancake" in sections and turn carefully. Press top firmly with plate and cook 2-3 minutes longer, until bottom is browned and crisp. Sprinkle with parsley and pepper to taste; serve immediately.
