Cottage Cheese Pancakes
|All purpose flour||1⁄2 Cup (8 tbs), sifted|
|Eggs||2 , well beaten|
|Milk||2⁄3 Cup (10.67 tbs)|
|Butter||1 Tablespoon, melted|
|Orange rind||1 Teaspoon, grated (Divided)|
|Cottage cheese||1 Cup (16 tbs)|
|Syrup||1 Cup (16 tbs)|
|Canned crushed pineapple||3⁄4 Cup (12 tbs) (Drained)|
1)In a bowl, sift together flour, salt and sugar.
2)In another bowl, mix eggs, milk, butter and 1/2 teaspoon of the orange rind.
3)Add to flour mixture and mix until smooth.
4)Take a lightly buttered 4-inch skillet, heat it and pour spoonsful of batter.
5)Spread it to cover bottom, cook until browned from both sides.
6)Place the pancakes on a warm platter.
7)In a mixing bowl, mix together cottage cheese, sugar, cinnamon and remaining orange rind.
8)Put some mixture in center of each pancake and roll up.
9)Keep warm until served.
10)In a saucepan, heat maple-blended syrup to boiling and add pineapple.
11)Pour the sauce on pancakes.
12)Serve each person 3 pancakes.
