Smoked Haddock Pancake Rolls

Ingredients
  Buttered smoked haddock fillet 212 Gram
  Milk 1 Cup (16 tbs)
  Margarine 25 Gram
  Flour 25 Gram
  Finely grated lemon rind 1⁄2 Teaspoon (Of 1/2 Lemon)
  Freshly ground black pepper To Taste
  Pancakes 8
Directions

GETTING READY
1.Prepare the haddock by following the package directions.
2.Once done, strain the liquor and make it upto 300 ml by adding milk.
3.Remove the skin and bones of the fish and chop it.

MAKING
4.Take a small pan, heat margarine in it and when done, put flour and heat for one more minute.
5.Add fish liquor and let it boil.
Cook on low flame for 2 minutes until thick.
6.Put haddock, lemon rind and pepper in the pan.
7.Add seasoning as per the taste.
8.Make 8 parts of the filling; place each part on a pancake and roll.

SERVING
9.Serve the smoked haddock pancakes with green crispy vegetables.

Tip
The pancakes can be stored for later use by double wrapping in the foil and freezing.
Defrost and reheat in a pan with melted butter before serving frozen pancakes.
