Sour Dough Pancakes

Ingredients
  Flour 3 Cup (48 tbs)
  Water 4 Cup (64 tbs)
  Sugar 1 Tablespoon
  Dry yeast cake 1
Directions

First step is to make the "starter" batch.
Use a wooden bucket or a crock with a loose-fitting cover.
Mix the flour with the water until smooth.
Add the sugar and the yeast cake, which has been soaked in 1/4 cup of water.
Stir the whole mass together in the bucket; then place the cover loosely on top.
It is important that cover be loose-fitting.
Place the bucket in a spot where it will be protected from temperature extremes.
During a cold night, the activity of the yeast will be retarded, but the yeast cells will not necessarily die.
