Holiday Potato Pancakes
|Potatoes||2 Medium, peeled|
|Onion||1 Small, grated|
|Egg/2 egg whites||1 , beaten|
|Flour||1 1⁄2 Tablespoon|
|Baking powder||1⁄4 Teaspoon|
|Canola oil||2 Tablespoon|
Grate potatoes into strainer.
Rinse with cold water to remove starch; drain.
Process potatoes with onion in food processor until well mixed.
Combine with egg, flour, baking powder, salt and pepper in bowl; mix well.
Drop by tablespoonfuls into hot oil in skillet.
Fry until golden brown and crisp on both sides; drain.
