Apple Cinnamon Oatmeal Pancakes
|Low carb pancake and waffle mix||1 1⁄2 Cup (24 tbs)|
|Ground cinnamon||1⁄4 Teaspoon|
|Vegetable oil||3 Tablespoon|
|Eggs||3 Large, beaten|
|Water||1 1⁄4 Cup (20 tbs)|
|Unflavored instant oatmeal||1 Cup (16 tbs)|
|Apple||1⁄2 Large, peeled, cored, and finely chopped|
|Sugar free pancake syrup||1⁄2 Cup (8 tbs)|
1. Whisk together pancake mix, cinnamon, oil, eggs, water, oatmeal, and apple in a bowl until blended. Allow batter to stand for 2 to 3 minutes.
2. Heat a nonstick skillet or griddle over low heat. Coat lightly with oil and pour in 1/4 cup batter per pancake. Cook until edges are dry and top is covered with bubbles, 1 1/2 to 2 minutes; flip and cook until done, about 1 minute longer.
3. Serve pancakes as they are done, topped with syrup and cream or keep warm in a 200°F oven.
