Blueberry Pancakes

Ingredients
  Plain flour 4 Ounce (100 Grams)
  Golden caster sugar 2 Tablespoon
  Egg 1
  Smoothie 150 Milliliter (1 Bottle Benecol Fruit And Dairy)
  Blueberries 100 Gram (Plus Extra To Serve, If You Like)
  Sunflower oil 2 Cup (32 tbs) (For Frying)
  Maple syrup 2 Tablespoon (For Serving)
Directions

1. Sieve the flour into a bowl and add the sugar. Mix the egg and the Benecol Fruit & Dairy Smoothie in a jug and gradually stir into the dry ingredients to form a smooth batter. Stir in the blueberries.
2. Lightly brush a heavy based non-stick frying pan with a tiny bit of vegetable or sunflower oil and spoon in 2 tbsp of the mixture. Cook for about 2 mins until the surface starts to bubble, then flip over and cook the other side until golden. Repeat using the remaining batter.
3. Serve the pancakes warm with a drizzle of maple syrup.
