|Flour||2 Cup (32 tbs)|
|Lemon||1 (Rind Grated)|
|Milk||1 1⁄2 Cup (24 tbs)|
|Beer||1⁄2 Cup (8 tbs)|
|Melted butter||1⁄2 Tablespoon|
Combine eggs, sugar, 6 tablespoons butter and salt in bowl; mix well.
Mix flour with lemon rind in small bowl.
Add to egg mixture alternately with milk and beer, mixing until moistened after each addition.
Chill for 1 hour or longer.
Pour in very thin layer into butter in heated skillet; shake pan to spread batter over bottom.
Bake over high heat until edge begins to brown, shaking occasionally to prevent sticking.
Cook until brown.
Repeat with remaining batter.
