Pancakes

Ingredients
  Eggs 3
  Buttermilk 2 Cup (32 tbs)
  Baking soda 1 Teaspoon
  Regular flour 2 1⁄2 Cup (40 tbs)
  Salt 1 Teaspoon
  Brown sugar 2 Teaspoon
  Melted butter 4 Tablespoon
  Double action baking powder 2 Teaspoon
Directions

Beat eggs until fluffy.
Add buttermilk and baking soda.
Sift together flour, salt and brown sugar.
Add flour mixture gradually to egg and milk mixture, alternating with butter.
Beat well after each addition.
Cover container with cheese cloth and let stand at least 3 hours, preferably overnight.
Add last two teaspoons baking powder just before frying.
Drop 1/4 cup at a time on 390 degree (very hot) griddle.
When bubbles appear, turn.
Makes approximately 24 medium pancakes.
