Basic Cottage Cheese Pancakes
|Eggs||2 Medium, separated|
|Cottage cheese||2⁄3 Cup (10.67 tbs)|
|Baking powder||1 Teaspoon|
|Plain unflavored yogurt||1⁄2 Cup (8 tbs)|
In a medium bowl, combine egg yolks, cottage cheese, flour, baking powder, and salt.
Beat egg whites, in a small bowl, until stiff but not dry.
Fold into yolk mixture.
Drop batter from mixing spoon onto a preheated nonstick griddle.
Brown pancakes on both sides, turning once with a spatula.
Serve 1/4 cup yogurt as topping on each portion if desired.
