Soy Griddle Cakes
|Sifted all purpose flour||1 3⁄4 Cup (28 tbs)|
|Soy flour||1⁄2 Cup (8 tbs), sifted|
|Baking powder||5 Teaspoon|
|Granulated sugar||2 Teaspoon|
|Eggs||2 , beaten|
|Milk||1 3⁄4 Cup (28 tbs)|
|Melted butter/Margarine/fat/salad oil||2 Tablespoon|
Sift together first 5 ingredients.
Combine eggs, milk,- and melted butter, add to dry ingredients all at once, beating smooth with a spoon or electric beater.
Drop batter by 1/4 cupfuls onto a hot griddle, greased or not according to manufacturer's directions.
Spread cakes out lightly with the back of a spoon.
Cook on one side until puffed, full of bubbles, and cooked on the edges.
Then cook on other side.
