Cottage Cheese Pancakes
|Cottage cheese||1 Cup (16 tbs)|
|Eggs||3 , well beaten|
|Sifted flour||1⁄4 Cup (4 tbs)|
1. Heat a medium-sized skillet.
2. Put the cottage cheese through a sieve and add the eggs, salt, 2 tablespoons butter or margarine and the flour and beat until well blended.
3. Melt the remaining butter or margarine in the hot skillet. Drop the cottage cheese mixture from the tip of a spoon into the skillet and brown until delicately brown, turn and brown on the other side.
4. Sprinkle with confectioners sugar and serve on a hot platter.
