Raised Cornmeal Griddle Cakes
|Yeast||1⁄4 Ounce (1 Package)|
|Lukewarm water||1⁄2 Cup (8 tbs)|
|Scalded milk||2 1⁄2 Cup (40 tbs)|
|Sifted flour||2 2⁄3 Cup (42.67 tbs)|
|Cornmeal||1 1⁄3 Cup (21.33 tbs)|
|Eggs||2 , well beaten|
Dissolve the yeast in lukewarm water.
Cool the milk in a bowl until lukewarm.
Add the yeast and mix well.
Mix dry ingredients and stir into yeast mixture.
Cover and let stand overnight in a warm place.
Add eggs and mix well.
Let stand for 10 to 15 minutes.
Drop from spoon onto hot greased griddle and cook until brown.
Turn and brown on other side.
