Cheese Latkes Pancakes
|Egg||1 Medium, beaten|
|Cottage cheese||1⁄3 Cup (5.33 tbs)|
|Skim milk||1⁄3 Cup (5.33 tbs)|
|Enriched white bread slices||1 , made into crumbs|
|Blueberry topping||1 Cup (16 tbs)|
In bowl combine all ingredients except Blueberry Topping.
Using a tablespoon, drop mixture by the spoonful onto a preheated nonstick skillet.
Brown lightly; turn with a spatula to brown other side.
Serve warm with Blueberry Topping.
