Royal Rice Pancakes
|Cooked rice||1 Cup (16 tbs)|
|Milk||1 Cup (16 tbs)|
|Eggs||2 , separated|
|Flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
|Shortening||1 Tablespoon, melted|
Mix the rice, milk and beaten egg yolks in a bowl.
Sift the flour with baking powder and salt and stir into the rice mixture.
Stir in the shortening, then fold in stiffly beaten egg whites.
Drop by spoonfuls onto a hot, greased griddle and cook until bubbles cover surface.
Turn and brown on other side.
