Double Blueberry Pancakes
|Milk||1 Cup (16 tbs)|
|Light corn syrup||2 Tablespoon|
|Corn oil||1 Tablespoon|
|Pancake mix||1 Cup (16 tbs)|
|Cottage cheese||1⁄3 Cup (5.33 tbs)|
|Blueberry syrup||1⁄4 Cup (4 tbs)|
Combine the milk, corn syrup, corn oil and egg in a mixing bowl.
Add the pancake mix and stir until dry ingredients are moistened.
Batter will be lumpy.
Add the cottage cheese and mix.
Pour 1/4 cup batter for each pancake on a hot griddle and cook until brown, turning once.
Serve with blueberry syrup.
