Perfect Potato Pancakes

Ingredients
  Potatoes 4 Medium
  Onion 1 Small
  Egg 1
  Flour 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Shortening 2 Teaspoon
Directions

Grate the potatoes and drain well.
Grate the onion.
Combine the onion and potatoes in a bowl and mix well.
Stir in the egg, then the flour, salt and pepper.
Heat a small amount of shortening in a skillet over medium heat.
Place 1 tablespoon potato mixture in skillet and flatten.
Cook until brown.
Turn and brown other side.
Repeat with remaining potato mixture.
