Acadian Cod And Potato Pancake

  Cod fillets/Haddock fillets 3⁄4 Pound, finely chopped
  Eggs 2 , beaten
  All purpose potatoes 3⁄4 Pound, peeled, finely grated to make 1 1/2 cup (3 Medium Size, Raw)
  All purpose flour 2 Tablespoon
  Yellow onion 1 Small, peeled, finely chopped
  Chopped parsley 1 Tablespoon
  Ground nutmeg 1⁄8 Teaspoon
  Salt 1 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Butter/Margarine 2 Tablespoon

1. In a large bowl, combine the cod fillets, eggs, potatoes, flour, onion, parsley, nutmeg, salt, and pepper.
2. Melt 1 tablespoon of the butter in a heavy 9- or 10-inch skillet over moderate heat. Using a large spoon, drop enough of the mixture into the skillet to make 4 pancakes, flatten each slightly with a pancake turner, and cook uncovered, for 4 minutes, or until the bottoms are brown. Tlirn carefully with the pancake turner, and cook for 4 minutes on the other side. Drain on paper toweling placed on a serving platter. Set in a keep-warm (250°F) oven. Melt the remaining tablespoon of butter, and cook the remaining mixture the same way. Serve with applesauce.
