1. Mix the grated sweet potatoes with the eggs, salt, flour, baking powder, and brown sugar. Heat the oil in a 12-inch skillet over moderately high heat.
2. Drop the batter into the hot oil by rounded tablespoonsful, flattening them slightly with a pancake turner. You will get about 8 pancakes.
3. Fry the pancakes about 5 minutes, or until they are golden brown on the bottom. Flip the pancakes over with the turner and cook for 4 or 5 more minutes. Drain briefly on paper toweling, and serve hot.
