Orange Pancakes

For 1/2 pint pancake batter
  Unsalted butter 1⁄4 Pound (1 Stick)
  Sugar 2 Ounce (1/4 Cup)
  Orange juice 1⁄4 Pint (1/2 Cup)
  Grated orange rind 2 1⁄2 Tablespoon
  Lemon juice 1 Teaspoon
  Cointreau 3 Tablespoon
  Orange marmalade 1 Teaspoon (Leveled)

Put the sauce into the chafing dish and heat over a low flame.
While it is heating, spread each pancake with a little marmalade and roll up.
Put the pancakes into the hot sauce and heat through, basting from time to time with the hot sauce.
