Coconut Hot Cakes With Kauaiian Sausage

Ingredients
  Sifted all purpose flour 2 Cup (32 tbs)
  Baking powder 4 Teaspoon
  Salt 1 Dash
  Beaten eggs 2
  Milk 2 Cup (32 tbs)
  Butter 1⁄4 Cup (4 tbs), melted
  Fresh grated coconut/Flaked coconut 2 Cup (32 tbs)
Directions

Sift together the flour, baking powder, and salt.
Combine eggs, milk, and melted butter; add mixture to dry ingredients, stirring just until the flour is moistened.
(There will be a few lumps.) Bake on a hot griddle, turning only once.
Spread warm cakes with honey or coconut syrup and roll up each.
Place 3 cakes on a mound of flaked coconut for a serving; drizzle with melted butter.
Top with butter pats and sizzling sausage.
Pass warm maple syrup.
(At the Kona Inn they offer guava jelly, papaya jam and poha jelly, too.)
