Silver Dollar Pancakes
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||1 Tablespoon|
|Skim milk||1 1⁄4 Cup (20 tbs)|
|Low fat sour cream||1⁄2 Cup (8 tbs)|
|Egg whites||2 , lightly beaten|
|Egg||1 , lightly beaten|
|Vegetable cooking spray||1|
|Sifted powdered sugar||1 Tablespoon|
Combine first 4 ingredients in a medium bowl; make a well in center of mixture.
Combine milk, sour cream, egg whites, and egg.
Add milk mixture to dry ingredients, stirring just until dry ingredients are moistened.
Coat a nonstick griddle with cooking spray, and preheat to 350°.
For each pancake, pour 1 heaping tablespoon batter onto hot griddle.
Cook pancakes until tops are covered with bubbles and edges look cooked; turn pancakes, and cook other side.
Sprinkle pancakes with powdered sugar.
Serve with Blueberry Applesauce, and garnish with fresh blueberries, if desired.
