Cinnamon Pear Pancakes
|All purpose flour||1⁄4 Cup (4 tbs)|
|Whole wheat flour||3⁄4 Cup (12 tbs)|
|Unprocessed oat bran||1⁄4 Cup (4 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Nonfat buttermilk||1 1⁄2 Cup (24 tbs)|
|Egg||1 , beaten|
|Peeled shredded fresh pear||1⁄2 Cup (8 tbs)|
|Vegetable cooking spray||1 Tablespoon|
Combine first 8 ingredients in a large bowl; make a well in center of mixture.
Combine but-termilk, egg, and water; add to dry ingredients, stirring until moistened.
Fold in shredded pear.
For each pancake, pour 1/4 cup barter onto a hot griddle or skillet that has been coated with cooking spray.
Turn pancakes when tops are covered with bubbles and edges look cooked.
