Potato Pancakes

Ingredients
  Raw potatoes 2 Cup (32 tbs), grated
  Eggs 2 , separated
  Baking powder 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Flour 2 Tablespoon
  Vegetable oil 1⁄4 Cup (4 tbs) (65 ml)
Directions

Peel the potatoes and soak in cold water for at least two hours.
Grate the potatoes and drain well.
This draining removes the starch.
Beat the egg yolks until pale yellow and add to the grated potatoes.
Sift together the baking powder, salt and flour.
Add to the potato mixture and blend thoroughly.
Beat the egg whites until stiff and fold into the potato mixture.
Heat the vegetable oil in a frypan until very hot.
Drop in the batter by the spoonful and cook until golden brown.
Drain on absorbent paper.
