Pineapple Yogurt Pancakes

Ingredients
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Baking powder 1 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Unprocessed oat bran 1⁄4 Cup (4 tbs)
  Sugar 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Unsweetened pineapple juice 3⁄4 Cup (12 tbs)
  Low fat pineapple yogurt 3⁄4 Cup (12 tbs)
  Egg 1 , beaten
  Vegetable cooking spray 1
  Pineapple topping 2 Tablespoon
Directions

Combine first 6 ingredients; make a well in center.
Combine juice, yogurt, and egg; add to dry ingredients, stirring just until dry ingredients are moistened.
For each pancake, pour 1/4 cup batter onto a hot griddle or skillet coated with cooking spray.
Turn pancakes when tops are covered with bubbles and edges look cooked.
Top with Pineapple Topping.
