Pineapple Yogurt Pancakes
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Unprocessed oat bran||1⁄4 Cup (4 tbs)|
|Unsweetened pineapple juice||3⁄4 Cup (12 tbs)|
|Low fat pineapple yogurt||3⁄4 Cup (12 tbs)|
|Egg||1 , beaten|
|Vegetable cooking spray||1|
|Pineapple topping||2 Tablespoon|
Combine first 6 ingredients; make a well in center.
Combine juice, yogurt, and egg; add to dry ingredients, stirring just until dry ingredients are moistened.
For each pancake, pour 1/4 cup batter onto a hot griddle or skillet coated with cooking spray.
Turn pancakes when tops are covered with bubbles and edges look cooked.
Top with Pineapple Topping.
